Let’s Start at the Beginning
Herbs come from a variety of plants, but tea comes only from Camellia sinensis. It is not considered tea if it doesn’t come from this specific plant. Over time, the plant has protected itself from different photosynthetic stressors by forming polyphenols, including flavanoids. These are chemical compounds that have the same beneficial class of compounds and antioxidants that make fruits and vegetables good for everyone.
Which Is Which
Green tea and oolong tea are very different from each other, mainly because of how they are processed. Their processing differences make each tea category effectively different even though they come from the same plant.
All tea leaves are green when picked. To stop the oxidation or natural enzymatic reaction of the leaf, green tea is heated. Once dried, green tea leaves are then intentionally rolled to break the cell structure.
Oolong tea leaves, on the other hand, are plucked, kept under carefully controlled conditions, and allowed to oxidize. They are not intentionally broken, which leaves most of the cell structure intact.
